Cultural Background
Shawarma originated in the Ottoman Empire in the 19th century as a street food of vertically roasted spiced meat wrapped in flatbread, popular across the Middle East especially in Lebanon and Turkey. Tandoori cooking traces back to ancient Punjabi traditions in India where yogurt-marinated meats were cooked in clay tandoor ovens for smoky flavor. Tortillas come from Mesoamerican maize traditions in Mexico dating back thousands of years and evolved into the wheat versions used today. This recipe fuses these elements into a modern one-pan format inspired by global street food remixes.

- Avoid overcrowding the skillet during searing to ensure proper char and caramelization on the chicken for authentic tandoori flavor.
- Substitute corn tortillas for a gluten-free version or add a pinch of cinnamon to the marinade for more shawarma depth if desired.
