Cultural Background
The history of pizza began in antiquity as various ancient cultures produced flatbreads with toppings. Pizza today is an Italian dish with a flat dough-based base and toppings with significant Italian roots in history. A precursor of pizza was probably the focaccia a flatbread known to the Romans as panis focacius to which toppings were then added. Modern pizza evolved from similar flatbread dishes in Naples Italy between the 16th and mid-18th century.[[1]](https://en.wikipedia.org/wiki/History_of_pizza)

Ingredients
- 2 (14-ounce) balls frozen pizza dough thawed
- 1 1/2 cups pizza sauce or tomato sauce
- 3 cups shredded cheese such as mozzarella or your available cheese blend
Instructions
- Preheat your oven to 450 degrees Fahrenheit and position a rack in the lower third. If using a pizza stone or baking steel place it in the oven to heat as well otherwise use an inverted large baking sheet.
- On a lightly floured surface stretch or roll each thawed dough ball into a 12 to 14 inch round or oval shape aiming for even thickness with slightly thicker edges for the crust. Transfer each to a parchment-lined baking sheet or peel dusted with cornmeal if available.
- Spread about 3/4 cup of sauce evenly over each dough round leaving a 1/2 inch border around the edge for the crust.
- Sprinkle 1 1/2 cups of shredded cheese generously over the sauce on each pizza distributing it evenly for full coverage and melting.
- Bake one or both pizzas (depending on oven size) for 12 to 15 minutes until the crust is golden brown and crispy on the edges the cheese is fully melted bubbly and starting to brown in spots and the sauce is hot and thickened.
- Remove from the oven let rest for 2 minutes then slice into wedges or squares and serve immediately while hot to capture the fiery tavern essence.
Tips
- Thaw frozen dough overnight in the fridge or for 1 to 2 hours at room temperature for easiest stretching without tearing.
- Avoid overloading with sauce or cheese which can lead to a soggy center instead use measured amounts and bake at high heat for crisp results.
- If your cheese is a block grate it fresh for better melting or substitute any melting cheese like cheddar or a mix from your pantry.
