Description
This modern fusion ramen features a rich, double-strength pork broth simmered with ginger, garlic, scallions, and mushrooms, finished with Japanese miso and a touch of butter for creamy depth and umami. The concentrated broth is batch-cooked for easy freezing, then diluted with 400 ml water per portion at serving time before adding fresh ramen noodles, soft-boiled eggs, and carrot ribbons. It delivers balanced savory-sweet flavors with excellent reheating quality and stores frozen up to three months.
Cultural Background
Ramen originated in Japan in the late 19th century, drawing from Chinese noodle soup traditions brought by immigrants and adapted with local ingredients like soy sauce and miso. Miso ramen became popular in Hokkaido in the 1950s, using fermented soybean paste for hearty umami in cold climates. This version fuses classic Japanese miso techniques with modern Asian fusion elements like butter for creaminess, inspired by contemporary chef experiments that blend Western dairy with East Asian flavors for enhanced mouthfeel.

PREP TIME: 30 minutes
COOK TIME: 2 hours
TOTAL TIME: 2 hours 30 minutes
SERVINGS: 8
DIFFICULTY: Medium
Ingredients
- 1 kg pork belly or pork loin, cut into 2-3 large pieces
- 8 scallions, whites and greens separated, whites smashed
- 200 g mushrooms, sliced (shiitake or button)
- 4 medium carrots, peeled (use 2 for broth, reserve 2 for ribbons at serving)
- 8 garlic cloves, smashed
- 60 g fresh ginger, sliced
- 4 tbsp neutral oil
- 120 g white or red miso paste
- 60 g unsalted butter
- 2 tsp soy sauce
- 1 tsp sugar (optional, for balance)
- Salt to taste (start low for concentration)
- 8 large eggs
- 800 g fresh ramen noodles (fresh at serving)
- Optional: 200 g corn kernels, 50 g chopped nuts for garnish
Instructions
- Heat oil in a large heavy pot over medium-high heat. Brown the pork pieces on all sides for 8-10 minutes until golden. Remove pork and set aside.
- In the same pot, add smashed scallion whites, garlic, and ginger. Cook 3-4 minutes until fragrant. Add sliced mushrooms and 2 carrots cut into chunks. Stir for 5 minutes.
- Return pork to pot. Add just enough water to barely cover the ingredients (about 1 liter). Bring to a simmer, then reduce to low, cover, and cook for 1.5 hours until pork is tender.
- Remove pork and strain the broth, pressing solids to extract flavor. Discard solids or reserve mushrooms for optional use. Return broth to pot and reduce by half over medium heat to concentrate (about 30-45 minutes), yielding roughly 1 liter of very rich base.
- Stir in miso paste, butter, soy sauce, and sugar off heat until fully dissolved and emulsified. Taste and adjust salt lightly, remembering this is 2x strength. Cool completely.
- Portion the concentrated broth into 8 airtight containers or freezer bags (about 125 ml each). Label with date and "dilute with 400 ml water."
- For serving one portion: Thaw one broth portion overnight in fridge or add frozen to 400 ml water in a pot. Bring to a boil. Add fresh ramen noodles and cook 2-3 minutes until al dente. Meanwhile, soft-boil an egg for 6-7 minutes, peel, and halve. Use a vegetable peeler to make thin carrot ribbons from reserved carrot.
- Divide noodles and broth into a bowl. Top with halved egg, carrot ribbons, sliced scallion greens, and optional corn or nuts. Serve immediately.
Tips
- Cool the concentrated broth completely before freezing to prevent ice crystals and maintain texture upon reheating.
- Avoid freezing dairy-heavy elements separately; the miso-butter emulsion holds up well when diluted and boiled.
- Substitute pork loin for leaner results or add a splash of rice vinegar at serving for brightness if desired.
