Description
Baking the assembled pasta lets cheese proteins unfold and flow while their amino acids react with sugars above 140 degrees Celsius to form new brown molecules called melanoidins. The same heat drives water from the pasta surface so the top dries enough for those reactions to create a crisp layer.
Cultural Background
Baked pasta dishes trace to Arab-influenced Sicily in the ninth century where tubular noodles were layered with meat and cheese for feasts. By the nineteenth century Sicilian weddings featured maccheruni degli ziti, tube pasta in meat sauce, named for the bride and groom. Italian immigrants brought these layered bakes to the United States in the late nineteenth and early twentieth centuries where they became everyday casseroles in homes with more meat and cheese available. The Maillard reaction begins when the amino group on a protein chain attacks the carbonyl group on a reducing sugar, forming an unstable compound that rearranges and breaks down into smaller reactive fragments. Those fragments combine further into large brown polymers called melanoidins that give the browned cheese its color and toasted aroma. In the oven the top cheese layer reaches temperatures high enough for this cascade while lower layers stay moist and simply melt. The key craft step is sprinkling the cheese only after the pasta and sauce have absorbed most free liquid so surface moisture stays low enough for browning instead of steaming. This prevents the cheese from turning rubbery or separating into oil and solids. A surprising true fact is that the same Maillard chemistry that browns the cheese top also produces many of the savory aromas found in roasted coffee and toasted bread.

PREP TIME: 20 minutes
COOK TIME: 35 minutes
TOTAL TIME: 55 minutes
SERVINGS: 6
DIFFICULTY: Easy
Ingredients
- 500 g ground beef
- 6 slices bacon, chopped
- 400 g rigatoni pasta
- 550 g tomato sauce
- 250 ml beef stock or water
- 300 g shredded cheddar or mozzarella cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon oil
- Salt and pepper to taste
Instructions
- Adult: Heat oil in a large oven-safe skillet or pot over medium heat.
- Add chopped bacon and cook until crisp, then remove to a plate.
- Add diced onion and minced garlic to the same pan and cook until soft.
- Add ground beef, break it into small pieces, and cook until browned.
- Stir in tomato sauce and stock or water, then bring to a simmer for 5 minutes.
- Adult: Meanwhile bring a large pot of salted water to a boil and cook rigatoni for 2 minutes less than package directions for al dente.
- Drain pasta and stir it into the meat sauce with the cooked bacon.
- Adult: Preheat oven to 180 degrees Celsius.
- Sprinkle cheese evenly over the top of the mixture in the skillet.
- Adult: Bake uncovered for 20 minutes until cheese is melted and golden at the edges.
- Let rest 5 minutes before serving.
Tips
- The cheese can separate into oil if baked too long after it melts; watch for the first signs of bubbling and browning then remove.
- Use any short pasta shape if rigatoni is unavailable.
- Next time brown the beef in smaller batches so it sears instead of steaming for deeper flavor.
